Quick Vegetable Broth

also known as my “Weeknight Broth Recipe”! Here’s a super simple and fast broth you can make in 30 minutes or less, perfect for a weeknight or last minute guests. Use this broth as a base for risotto, pasta sauces, ragu’, and soups. It adds lots of flavor to your dishes with no weird added ingredients.


Serves 4
Ingredients
2 carrots
2 onions
2 celery sticks
salt and pepper, to taste

2 liters of fresh water

Method
Peel 2 carrots, 2 onions, wash two celery sticks. Add these ingredients whole or cut in half to fit into a large enough pot and add 2 liters of water, add salt & pepper and bring to a simmer. When the carrots are fork tender, about 30 minutes, your broth is ready!

You could also add some beef or chicken stock to the above for a richer flavor if using as a base for a soup.

TIP: I freeze any leftovers in half liter portions so that I always have some on hand. Having said that, it takes less time to make it from scratch than to defrost the bottles!
